What is Sucralose?
Sucralose by HSN Raw is a non-nutritional (zero calories) artificial sweetener that is extracted from sugar. It was discovered in 1976 as a result of a joint research project carried out by Tate & Lyle and the Queen Elizabeth College in London, UK. Both were studying the relation between the structure and the taste of a molecule of sugar, they discovered that by changing slightly the structure of sugar, they could achieve a more intense flavour as well as it not providing calories.
How is Sucralose obtained?
Sucralose is obtained through a multiphase patented process, that starts off with sugar and selectively replaces three groups of hydrogen-oxygen from the sugar molecule for three atoms of chlorine. Common sugar has three hydroxyl groups (in positions 1, 4 and 6) changed for chlorine.
The result is a sweetener that is 600 times sweeter than sugar and that additionally does not provide calories. It is presented as a very fine white powder that is very easily dissolved in foods and drinks, without making any lumps.
Properties of Sucralose
Sucralose is not metabolized to provide the body with energy, reason for which it does not provide calories (zero). Although it derives from sugar, our organism does not recognise it as a sugar or as a carbohydrates.
When we take sucralose, a large part of it is not absorbed and simply passes through the digestive system. The small amount of sucralose that is absorbed is quickly eliminated in the urine.
Sugar VS Sucralose
Sucralose is, approximately, 200 times sweeter than sugar and therefore very small amounts are needed to sweeten our dishes. For example, a standard can with 350ml of dietary drink would only need 70 milligrams (0.07g) of sucralose to obtain the same level of sweetness as the conventional version, which would have 40g of sugar or high-fructose corn syrup.
